A.Mazing Minestrone

Today the weather performed very similar to yesterday. Although my bones are creaking, I’m enjoying snuggling in my blankets at night, wearing layers and looking very forward to the hearty soups, curries and stews that will be on the menu during this coldness.

Tuesday nights I cook. Tonight it was A.Mazing Minestrone. Delish!

Serves 4

2 carrots
1 large zucchini
1 medium onion
1 sweet potato
2 sticks of celery
1 can of four bean mix (you decide how big the can is depending on your taste buds)
400g can of diced tomatoes
1L (4 cups) of beef stock
2 cloves of garlic, crushed
Olive oil

1. Chop all your ingredients. I like them quite chunky but chop how you wish.
2. Put some oil in a large pot and place the onion and garlic in there. Let the aromas fill the kitchen {I love this smell!}
3. Add the carrot, celery, potato and zucchini. Stir to combine. Cook over high heat, uncovered for 5 minutes, stirring occasionally.
4. Add the beef stock, four bean mix and tomatoes to the pot. Stir. Cover and bring to the boil. Reduce to medium-low heat and simmer, cover from 30 minutes or until vegetables are tender. Stir occasionally during this time.
5. Serve hot with crusty bread.

Tip: If you want leftovers, you may want to make a double batch. This will be more popular then you think!
