Time Limit & Budget Cooking = Stir-Fry!

It’s my turn to cook tea. I get home after 5pm and by then my tummy doesn’t want to wait too long for dinner. With a time limit and budget I decide stir-fry is the go. For this recipe you can replace what ever ingredients with what ever is in your home. These were my choices tonight…

Makes 4 large serves 

Ingredients:
1 small red capsicum, chopped
1 medium onion, chopped
3 bok choys
300g brocolli
1 tin of corn spears
100g snow peas, chopped into bite size
3 mushrooms
1 tin of pineapple (optional)
Cashews {add as many as you desire}
2 cloves of garlic
2 chicken breasts, cut into strips
Ketjup Manis
oil

Method:
1. Heat some oil in a wok
2. Brown the chicken and remove from the wok to add later.
3. Place the onion and garlic in a wok, stirring until the onion is cooked -transparent.
4. Add the capsicum, bok choy, brocolli and peas. Stir. Cook on low, covered until the vegetables soften slightly
5. Add the pineapple and baby corn and continue to cook.
6. Add the chicken and cook, covered for 5 minutes until heated through.
6. Add your desired amount of Ketchup Manis. Note: although it may not look like alot of sauce, it will surprise you!  Stir.
7. Serve hot.

It’s wasn’t only yummalicious, it’s also healthy!


Did you know Adelaide gave us the coldest morning we have had for 10 months today? No wander I didn’t want to get out from under the covers this morning!
